• Salad of Artichokes Bayonne ham, foie gras & a white wine Shallot vinaigrette.
• Fricassee of guinea fowl, spring onions and sage.
• Medium rare grilled Tuna with red onion relish, grilled tomatoes and goat’s cheese.
• Summer fruits in red wine on Walnut Caramel Parfait

• 2 Chilled cucumber dill, crème soup with oysters and a pinch of dry sherry
• Young spinach, avocado, mozzarella and roasted chilli salad with red basil oil
• Mixed Shell Fish and sweet peas risotto
• Strawberry Romanoff in aborn syrup roasted pear with yoghurt ice cream and mint

• Chilled paprika gimger soup with spider crab dumplings
• An envelop of filo dough filled with spicy roasted pigeon breasts, cinnamon and almond.
• Lasagne from grilled eggplant, wild mushrooms, semi dried tomatoes, pine nuts, mozzarella and pesto
• Crème brulee of fresh strawberries and coconut

• Thin sliced tender Veal Tongue and poached Quail Eggs in fresh chervil sauce.
• Wild Duck consume with a drop of truffle scented olive oil and pepper mushroom brunoise.
• Roasted fillet of Beef and Lobster Tail on a salad of articok- hearts and a white wine saffron aioli
• Armagnac flavoured crepes with honey roasted figs and Mascarpone
